This organic monocultivar Itrana oil is made from only olives of the Itrana variety. The olives are harvested between October and November and are cold-crushed within 12 hours of harvesting in the continuous cycle mill with reduced oxidative impact. The smell is intense and fruity, with notes of fresh grass, tomato, artichoke and has a very harmonious taste. The color is light emerald green.
